Side-by-side comparison samples were displayed for donut sugar, candy coating sugar, white candy melts, and RTE fried chicken breading, emphasizing that "switching ingredients doesn't require changing processes."

✨What Is VersaCal® Bright?

Base Material:​ Food-grade calcium phosphate, part of Innophos's VersaCal series. The "Bright" suffix denotes a specific grade optimized for high whiteness, narrow particle size distribution, and suitability for visual replacement of TiO₂.

Not a novel structural color or fermented/plant-extracted pigment — it is an inorganic mineral powder​ that provides whiteness and opacity through refractive index and light scattering, the same physical whitening approach as TiO₂. However, its refractive index (~1.63) is lower than TiO₂ (~2.7), so particle size optimization and surface treatment are necessary to approximate visual performance.

Added Value:​ Replacing TiO₂ simultaneously introduces calcium + phosphorus​ (calcium phosphate is already a recognized mineral nutrient source). Labels can change from "contains titanium dioxide" to "contains calcium phosphate (calcium fortificant)," which is clean-label friendly.

🎯FDA Approval & Permitted Use Scope (Critical Boundaries)

Innophos pursued an FDA petition specifically to have calcium phosphate classified as a color additive in certain product categories​ not relying on the generic "calcium phosphate is already allowed as an additive" loophole. The currently approved four categories are:

Sugar for coated candies​ Whiteness/brightness comparable; no flavor carryover.

White candy melts​ Color, viscosity, adhesion, and coating behavior benchmarked against TiO₂.

Ready-to-eat chicken products (pre-fried/pre-baked breading)​ Whitening + clean label improvement.

Important Note:​ The approval covers "selected food applications"​ , not all food categories. Uses such as sauces, dairy beverages, chewing gum, or tablet coatings would require separate petitions or reliance on calcium phosphate's existing GRAS/additive status — these four categories cannot be automatically extended.

🥯What "1:1 Replacement" Really Means

Only in the donut sugar scenario​ does Innophos's official material explicitly state "functions as a 1:1 replacement for TiO₂" — meaning equal weight substitution, unchanged sugar formulation, and identical dusting quantity.

For candy melts / coating sugar, the language used is "comparable performance" rather than strict 1:1. Actual formulations often require slight adjustments in particle size gradation or dosage (0.8–1.2×) to match TiO₂'s hiding power, because calcium phosphate's refractive index (~1.63) is significantly lower than TiO₂'s (~2.7).

🥇Why Innophos Instead of Competitors

Calcium phosphate replacing TiO₂ is not a concept born in 2026​ (Dunkin' Donuts internally switched to VersaCal® Bright for its sugar as early as 2015). However, obtaining FDA classification of calcium phosphate as a color additive for these specific product categories​ — driven by Innophos's own petition — is a regulatory milestone that gives them clear first-mover advantage.
